Sloppy Joe Pizza, Ranchy Frito Corn Salad and Caramel Macchiato Cookies

We enjoyed having Erin eat supper with us tonight. She and Logan both really liked the Ranchy Frito Corn Salad. I think teens will eat almost anything if you put enough ranch dressing on it! :)
Logan is all about some Sloppy Joes, so he was delighted with this Sloppy Joe Pizza. We thought the corn salad went nicely with this variety of pizza. Slaw would be good, too.

I spied a box of cookie mix in the pantry the other day that I had gotten for Logan a while back at Hobby Lobby. They have a nice little selection of cookie mixes in their cake decorating supplies area. His favorite coffee house drink is Caramel Macchiato, so when I saw this flavor of cookie, I just had to get it for him. These mixes are somewhat less expensive than some. I can't remember how much these were. Like most of their other items, Hobby Lobby probably runs these on sale from time to time.

Sloppy Joe Pizza


Sloppy Joe Pizza

1 refrigerated pizza crust
Sloppy Joe meat topping
1 - 2 cups pizza cheese blend

Preheat oven to 375 degrees. Spray baking sheet with cooking spray.

Prepare topping.
Pat dough into baking sheet.
Spread topping over crust.
Bake for about 10 minutes. Remove from over; sprinkle with cheese. Return to oven until crust is golden brown and cheese is melted.

Topping:

1 pound ground beef
½ c. catsup
2 tablespoons yellow mustard
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
Liquid smoke

Brown ground beef in a skillet and drain. Return to skillet and add all other ingredients and simmer a few minutes.
