Bacon-wrapped Chicken Stuffed with Cream Cheese and Jalapeño

We ate at home last night. Larry grilled this delicious chicken for us! Many thanks to Terri for sharing this recipe! It is really, really good! We didn't use the jalapeños, but I think they would be delicious. I had a jar in the fridge, but no one seem to want them last night. It will give us something to look forward to trying the next time we make this dish. These chicken breasts were so large, we all ended up cutting them in half and saving the rest for tonight.
I also tried a new potato dish called Parmesan Potato Bake. We all really liked it, too!

Bacon-wrapped Chicken Stuffed with Cream Cheese and Jalapeño

INGREDIENTS:

Chicken breasts (Larry filleted ours.)
Cream cheese (I used light cream cheese - about an ounce per chicken breast)
Jalapeno peppers
Bacon (Oscar Meyer is our favorite!)

DIRECTIONS FOR GRILLING:

Chicken breasts, spread cream cheese in the middle, sprinkle a few jalapeño peppers, roll, close and wrap a strip of bacon over it securing with a toothpick (Soak toothpick in water so it want catch on fire)! Grill until bacon is crispy!

OR

DIRECTIONS FOR BAKING:

Filet chicken breasts, spread cream cheese in the middle, sprinkle a few jalapeño peppers, close and lay a strip of bacon over it! Bake until bacon is crispy!

  1. My hubby would like these best with the jalapeño peppers but I would omit them from mine. The bacon is the perfect touch! Thanks for sharing! :)

  2. oh does that chicken sound good. I like cream cheese anything and Hubs loves bacon. Great recipe.
