Mother's Day Freebie!!

My sister-in-law, Leigh Ann, and brother-in-law, Brendan, are in town, and we had a belated birthday celebration for Brendan last night. We had the Oven-baked Catfish. I do usually buy the big bag of frozen Mississippi raised catfish from Sam’s. I had plenty for the whole family on hand, which worked out really well. I grew up within a couple of miles of a catfish farm. There is nothing as good as fresh catfish purchased from a Mississippi catfish farmer, but these are pretty good. I made the Twice Baked Potato Casserole, which I had the ingredients for since I didn’t get to make it earlier in the week. I did make the Easy Slaw. Instead of the frozen hush puppies, I made Cheesy Corn Muffins, to which I added a cup of frozen whole kernel corn .
As an appetizer, I made the Artichoke Ranch Dip from the freebie Hidden Valley Ranch PDF cookbook linked above. I had some roasted red peppers in the fridge that I needed to use, so this worked out perfectly! Because they are a bit costly, I only used one can of artichokes. I think one can is plenty. Since I wasn’t sure everyone liked the French fried onions, I left them out. I baked as directed, and sprinkled a bit of Parmesan cheese and paprika on top during the last five minutes of baking. We all liked it! My father-in-law said, “This sure is good!”
Larry’s family said they really enjoyed everything. We loved having them over to eat. It’s always a treat to have them home!
